The Del's Prince of Wales fine dining restaurant is a bright space with a vanilla-hued contemporary décor and floor-to-ceiling windows. The dining area expands onto an outdoor terrace boasting an ocean view. If what you want is an elegant and romantic evening, then the Prince of Wales is the place to make your reservation. Ruled by a refreshingly contemporary American style, the menu changes with the seasons. Innovative appetizers have included Snake River Farms Kobe carpaccio while entrées run to Canadian free-range pheasant and poached New Zealand John Dory with lobster ravioli. When the dessert menu appears, you may find such interesting delights as a blood orange salad with a Grand Marnier sorbet, and a multi-layered cinnamon mousse-apple mille-feuille drizzled with caramel sauce.
