Authentic Mexican street fare, and the atmosphere to go with it, rule at Carlos Chávez’s Puras Tortas and its companion "cevicheria" called De Mar. Pristine ceviches are full of flavor with fresh fish, cilantro and limes, although one might argue for more lime juice in the marinade. The "cevicheria" also produces crisp fried or grilled fish paired with a kick-laden green salsa. The torta is a huge sandwich with layers of black beans, meat, fish or perhaps shredded chicken mole, along with avocado, lettuce, tomato and onion on a big bun. Originating in Mexico City, the huarache is hand-formed corn masa that's fried and then topped with black beans and your choice of guisados, or stews --- the pork rib meat makes a good option. Fold it over like a sandwich or grab a fork. For a beverage, go with a Mexican Coca-Cola, made with sugar instead of corn syrup; a fruit-based drink; or horchata, a rice milk with cinnamon.
