The noble torta is the king of Mexican fast food, a sandwich that's not just a sandwich. Imagine a generous bun laden with black beans, shredded chicken mole, avocado, lettuce, tomato and onion. It's a two-hander that can't be beat. We like La Española, which combines beef with chorizo and cheese; the Merced consists of shredded beef and a chipotle-caressed sauce. Beer and wine are not served at this location. The smarts behind this concept belong to Carlos Chávez, who also owns Fonda San Carlos.
