If business takes you to Brentwood, thank heavens there’s Quails for spectacular food. The French-trained African chef has a way with salads at lunch so look for outstanding offerings such as peppered salmon salad with Perigord black truffle oil and vegetable tartlette. Then there’s a tenderloin-portobello club, a Bison burger, caramelized emu filet sandwich, plus pastas. Dinner performs culinary acrobatics with the crab, lobster and eggplant gateau, and a warm lobster taco to start; and on the main stage, things like free range pheasant with pearl cous-cous and fried frisée, and tandoori shrimp and scallops over quinoa risotto with lavender essence and black truffle vinaigrette. The chef is very talented, so look for the daily specials to be genuinely special.
