THIS ESTABLISHMENT IS NOW FOR PRIVATE DINING. Quantum Kitchen & Cocktails is compelling, not so much for its American-grill inspired menu, but because it diverges from the prosaic in a relatively conservative dining city. From the conceptually avant-garde style of ordering lunch---which takes place at the counter, and includes a clipboard and highlighter pen---to build-your-own burgers served in a wooden box, Quantum has a contemporary urban feel. Dinner is somewhat more formal, with items such as flatiron and New York steaks, du Breton pork chop, seared ahi and beef tenderloin bolstering the playful lunch menu. But make no mistake, gourmet burgers are Quantum’s forte. The list of fanciful toppings features bourbon mushrooms, caramelized onions and honey-cured bacon, among myriad other options. And the sauces are equally adventurous. (Think sambal aïoli and Cognac peppercorn in place of ketchup and mustard.) Much of the Quantum experience derives from a balance between creative and classic: diners have the option to “spike” their milkshake with hazelnut liqueur; spice their fries with rosemary and sea salt; and slather their steak with blue cheese sauce, their halibut with guava-soy glaze. It’s a refreshingly unpretentious dining experience, albeit somewhat confusing for first-timers.
