Swiss-born chef Franck Giovannini now presides over The Restaurant L'Hôtel de Ville Crissier, near Lausanne. He had worked alongside former chef/owner Benoît Violier, whose death in 2016 stunned and saddened the culinary community. (Violier was preceded by his mentor, Philippe Rochat, and the establishment's founder, Frédy Girardet.) Giovannini presents à la carte as well as set menus featuring dishes such as lamb from the Plateau d'Albion simply grilled and served with young violet de Provence artichokes and Nyons olives.
