The Restaurant at Las Ventanas al Paraiso presents diners with beautiful views of the Sea of Cortez. Executive chef Fabrice Guisset prepares what the resort calls "Baja-Mediterranean" cuisine, sourcing organic ingredients from the Baja peninsula and cooking them in a healthy Mediterranean style. His dishes might include Merlot glazed tuna with onion marmalade; seared baby red snapper with vegetables ratatouille and mustard sauce; and roast suckling pig with sweet potato purée. Guests can also enjoy traditional Mexican cuisine with The Flavors of Mexico menu, or sample modern reinterpretations, like a tamale with corn sauce and foie gras, in the multi-course Mexican Tasting Menu.
