Although Hubert Keller could not resist the urge to expand to Las Vegas with a sibling of his famed San Francisco mainstay (as well as with the decidedly more casual Burger Bar), it seems he left his heart in San Francisco. While we swoon over Fleur de Lys deux, we think it is this stylish French-California locale, the oldest at the top of San Francisco's best restaurants list, that’s most deserving of inclusion on our Top 40.
