THIS ESTABLISHMENT IS CLOSED Richard Chen’s Pittsburgh restaurant (he’s the executive chef of Wing Lei in the Wynn Las Vegas) is an impressive, soaring space, with a two-story window wall, setting the stage for his sophisticated Pan-Asian menu. The décor is understated elegance---crisply contemporary but warmed by rich Chinese silk hanging lanterns. A wine wall, glass panels with embedded flora and other architectural devices define specific areas for the bar, public dining and private dining rooms. On a daily basis, UK-born chef Simon Lewis executes Chen’s light touch and refined sauces, using premium, natural ingredients. Signature dishes include dim sum, especially crystal shrimp dumplings and crispy scallop; and tuna sashimi with marinated jellyfish. Unusual for an Asian restaurant, desserts are menu highlights: a crunchy chocolate caramel bar, with hazelnut ice cream; and coconut tapioca, with tropical fruit and passion fruit glaze.
