Sadler's devotion to prime ingredients is nothing short of obsessive and he creates unforgettable dishes with them, such as spaghetti with scorpion-fish sauce; red prawns with porcini, herbs and potatoes; and roasted wild duck with Barolo glaze, pumpkin cream and onions.
