Hong Kong's Kevin Wu (via Los Angeles) imports the flavors of China to the desert with huge tanks of live seafood ready to be sizzled in garlic and soy. A modern take on classic Chinese cuisine, this is a seafood oasis. The 12-seat bar is a watering hole for the cognoscenti. Aficionados know the dim sum for lunch is second to none. We also like the seafood hot-and-sour soup, and the scallops and asparagus wok-tossed in a scallion bisque with toasted pine nuts. Lobster Cantonese is a chef’s specialty. Go for the Hong Kong duck fire-roasted with traditional Southern-style seasonings or the beef with aged oyster sauce over a bed of American or Chinese broccoli. Among sweet temptations is the appealing coconut and taro pudding.
