: Chef Hemant Mathur (Devi, Tulsi) has opened Sahib, an homage to Northern Indian cuisine. Food includes meats simmered in copper pots (the wazwan cooking style) to achieve flavor and tenderness. Among the examples of this cooking style are Murgh Chop (roasted chicken thighs basted in a creamy marinade) and Rista (Kashmir-style lamb meat balls with saffron gravy).
