When former Hot Tomato’s general manager and partner Jimmy Cosgrove announced he was leaving the place, you could hear the “oh no” from foodies all over the Insurance City. But the laments quickly turned into pleasant anticipation when Cosgrove announced he and partners Andy Rizzo and Dave Caudill were opening their own place called Salute. The eatery’s signature menu items include rose pasta, a mélange of spinach, mushroom, four-cheese tortellini and sweet sausage bathed in a light tomato cream sauce; chicken gnocchi with sun-dried tomatoes and pesto cream sauce; and the four-cheese garlic bread. But there are other items to try as well at this place that features a Tuscan-inspired décor and a sophisticated bar. Ragù bolognese is a classic mix of beef, pork and veal over rigatoni, while orecchiette Bobo is a pleasant and healthy blend of pasta and grilled vegetables. Be sure to try the light tiramisu. Seasonal patio dining is perfect for people-watching. And for theater-goers and those who just like a late-night outing, Monday features a 3 p.m. to closing happy hour with reduced price food and drinks.
