From a San Antonio perspective, this is Cal-Mex cooking; theres not a big burrito tradition locally, and the mom n pop owners both hail from, and source their tortillas in, California. Those formidable, flavored flour tortillas are the base of the menu---a blackboard-type document sporting five variations on the roll-up theme, plus the option to assemble your own from the listed ingredients. Chose from chipotle, spinach and whole wheat models, among others, then go to town with the stuffing---each starting with seasoned rice and, usually, beans either black or pinto. The Señorito came with black beans, for example, and boasted chicken fajitas in addition to from-the-cob corn and other fresh-and-crunchy vegetables. The house salsas are worthy as well; try them all.
