Like blockbuster films, many New York restaurants with big-name chefs like to open with red carpet fanfare. Shang was no exception. Hailed as Jean-Georges, Nobu and David Chang rolled into one Hong Kong-bred toque, chef Susur Lee arrived at the chic Thompson LES hotel to shake up the Asian fusion scene. The décor grabs the attention like a sexy action film with its exotic black lattice work, a wood-slatted ceiling and walnut banquette tables capped with clouds of copper and bronze mesh overhead. Cocktails set a winning theme, especially the dramatic Yen Yen, a blend of cucumber, fresh lime, ginger liqueur and vodka. The family-style menu features some intriguing combinations, such as desert moss lending brine to tofu custard; minted yogurt and pineapple chutney coolly and sweetly balancing chickpea and onion fritters; and squab enriched with layers of foie gras. A signature dish, Singapore slaw, boasts 19 ingredients---a refreshing, shredded pile that includes taro, pickled ginger and pea shoots. Not every dish pops, however, as the seasoning in some, like the oxtail soup dumpling, could use some spicy special effects. Still, diners will remember their meals well after the credits roll.
