Siam Bangkok, a modest mom ‘n’ pop tucked into the corner of an unprepossessing strip center on the flank of Fort Sam Houston, has redefined Thai for many local lovers of this complex cuisine. “It’s the real thing, not Thai-Lao,” asserts the feisty chef. Having tasted her transformative pad thai, we tend to agree. And having feasted visually on the striking spring rolls, bias-cut and sprouting with artfully arranged vegetables, we’re willing to believe both real and regal. There is a sweetness to many of the sauces, and an overabundance of clove once did do in the Bloody Mary of Curry. But in general, the sweetness works, especially when mingled with hints of pungent fish sauce as in the oddly titled Sirisupa Siam’s Shumai, a creation featuring pork-stuffed dumplings adorned with fried shallots. Topaz of Siam Indian yellow curry is another must, as is the Lucky L. Original, ground pork and more presented in an amphitheater of lettuce.
