This three-story, freestanding replica of New York's steakhouse seats 600-plus in its versatile rooms. The sidewalk café is adjacent to the Strip, and open from lunch until late night. Wollensky’s "famous" split pea soup is a favorite, as is the Maryland crab cakes appetizer. Among lunch entrées are the Wollensky’s butcher burger with tomato-jalapeño relish, Vermont cheese, bacon and Cajun-spiced onions; and the Wollensky salad with romaine, teardrop tomatoes, potato croutons and bacon. We like the pink peppercorn-crusted tuna with Asian slaw, ponzu and wasabi cream. Roasted free-range chicken with summer succotash and natural jus, and seared scallops with jalapeño-lime emulsion, fruit salsa and crispy plantain are lunch and dinner winners. On the dinner menu, the pan-seared salmon comes with corn purée, fava beans, tasso ham and cipollini onions. In addition to the classic dinner steaks, we recommend the veal rib chop and coffee-and-cocoa-rubbed filet mignon. Among sides for two are the whipped potatoes and truffled mac ‘n’ cheese. Save room for the carrot cake with walnuts and raisins, layered with sweetened cream cheese. The all-American wine list nicely complements the cuisine.
