Those who like In Soo disagree on only one thing: their favorite dishes. They all like the owner’s forthright manner, they all acknowledge that one must not rush perfection, and all evangelize for the restaurant whenever the topic of Chinese food comes up. In fact, when the original location closed, those who had jammed the place mourned the loss of the first-rate water dumplings, thrilling hot-and-sour soup and mighty moo shu so much that In Soo Jung brought her specialties back a few doors down in larger, slightly fancier, slightly higher-priced digs. As delicious as the standards are, a diner is wise to consider the back of the menu, where chef's special items are listed, like Korean bulgogi and hot-spicy yellowfish soup with tofu and mushroom. And there's a kimchi fried rice, too, a tribute to the ubiquitous, spicy condiment that appears on every table.
