THIS ESTABLISHMENT IS CLOSED Tucked in the basement of the Hyatt Regency Maui is a gem of an eatery, with a tried-and-true menu of classic Italian dishes. Every time we’ve eaten here, the service and food have been superb. It’s not the kind of restaurant you’d expect to find in Hawaii: no view, and a speakeasy décor that is half Godfather, half Laura Ashley. It’s a good idea to try at least one pasta, such as fettucine carbonara, laced with crispy Italian pancetta, green peas and creamy alfredo sauce, and one item from the meat and fish offerings, between two people. We like the veal piccata with capellini marinara and the pescatore alla griglia (seafood grill). The fresh catch is usually a good bet. The kitchen also turns out great Marsala and marinara sauces. For starters, the steamed vongole al bianco (clams with white wine) are very tasty, and it’s impossible to resist dipping the warm foccacia bread into the garlicky broth. If you’ve still got room, try a grappa and the warm chocolate ganache with vanilla sauce to finish you off. The wine list features a sampling of notable Italian and American wines, by the bottle and the glass. Spats Trattoria is a great place to find refuge from the numerous Pan-Asian and Hawaii Regional cuisine establishments that dominate the Maui dining scene.
