SpireWorks' owners went to great lengths (literally, as in trips to Turkey) to find a recipe for the most authentic --- or, let's say, the best --- döner (meat cooked and sliced from a vertical rotisserie) to recreate and adapt at their restaurants. And to get the sandwiches just right, they developed their own exclusive bread recipe. (If you're watching your carbs, replace the bread with wild rice or fresh greens.) Chef Kuniko Yagi, a David Myers alum who ran the kitchens at Hinoki & the Bird and Comme Ça, consulted on the menu. The quick-service spot's angle is a multicultural tour of toppings for spit-roasted beef, chicken or veggie kofte --- look for Turkish, Latin, Thai, Chinese and various regional American add-ins ranging from tamarind chutney to zaatar labneh, tomato jam, Russian dressing and hoisin sauce. Guests have the option to design their own creation or choose from the list of "Destinations," such as New York, Bangkok and Baja California. They're all priced at $9.50. Complement your meal with sides of coleslaw or potatoes and slices of "SpireCakes" in flavors like strawberry shortcake, dulce de leche and tiramisu.
