Order from one of the “create-your-own” meals outlined on colored sheets. So if you want a taco, pick corn or flour tortillas; the meat base such as chicken, grilled steak, shrimp, or fish of the day; a topping; a salsa; and a cheese. Pay the cashier, wait for the line cooks to whip up your meal, then head to the nearest (or farthest) table. There’s also a happy hour, an open-late bar, and a food truck that roams the streets of DC.
