In the makeshift wake of Katrina, a taco truck set up shop in the parking lot of a damaged gas station and began serving lunch. Soon, that truck morphed into a permanent taco stand housed in what had been the gas station's cashier booth. Now, the gas station is back in business again, but it appears that Taquería El Chaparral is here to stay. So even as motorists fill up their tanks within arms’ reach, the cooks inside this tiny kitchen continue to turn out fresh, simple tacos filled with flavorful meat. One favorite is marinated pork called "al pastor," which comes sprinkled with onions and cilantro. El Chaparral also makes tortas, or sub-style sandwiches, quesadillas and sweet tamarind punch to wash it all down.
