Finding food thats Mex-minus-the-Tex is as difficult in New Orleans as it is in most American cities. Taqueros, occupying a garage-like structure in the outer reaches of Kenner, comes closest to the real thing in this town, the mother lode of gumbos and jambalayas. The tacos are fine in their own right, but the dinner specials and sauced dishes are the true glories of Taqueros spotless open kitchen. From the well-tended grill come succulent corn-on-the-cob and soft and sweet, golden brown plantains. A panoply of chiles enlivens the sauces, each one custom-tailored to flatter the flavors of meat or fish. In the cochinita pibil, cubes of lean and tender pork find an ideal haven inside a banana leaf with a bright-red achiote sauce.
