Perched on the 102nd floor of the International Commerce Centre at The Ritz Carlton, Hong Kong, Tin Lung Heen is a grand restaurant with views and service to match. It is where Hong Kong's elite meet for char-grilled Iberian pork and steamed crab claws in rice wine sauce. Tables near the tall windows offer views of Victoria Harbour. Under the direction of executive chef Peter Find, chef de cuisine Paul Lau delivers dim sum and straightforward Cantonese cuisine utilizing fresh ingredients. Whole Peking duck is elegantly presented tableside, or savor delicate preparations such as fried bone marrow. Double boiled chicken soup with fish maw (air bladder) is served in a baby coconut, while fried rice with diced abalone arrives enrobed in a lotus leaf.
