Tosca, which draws its name from the famed Puccini opera, presents a fittingly dramatic scene for dining in The Ritz-Carlton, Hong Kong. The Italian restaurant features an exhibition kitchen, striking chandeliers, and two-story windows that stretch from the floor to the ceiling, revealing Victoria Harbour and city views from the 102nd floor of the International Commerce Centre. The hotel’s executive chef Peter Find and chef de cuisine Vittorio Lucariello, who is a native of a town near Naples, present a menu of Southern Italian cuisine made with fresh, quality ingredients, 90 percent of which are sourced from Italy. Even before the appetizers, flavor bursts from the amuse-bouche that might be a dollop of mozzarella with sun-dried tomatoes and anchovies or a single rigatoni with skinny slabs of pork and tuna complemented with a drizzle of chili sauce. Among starters, roasted pigeon is paired with foie gras and tiny cubes of Campari jelly.
