Given the restaurant’s name, it’s no surprise that chef Jerry Mendoza, formerly of The Meetinghouse and Moose’s, peppers Trademark’s menu with dishes such as the “original” Meetinghouse biscuits and many of the contemporary American dishes diners remember from Moose’s. Also featured are Dona Luisa’s famous deviled eggs from Trademark's sister restaurant The Elite Café where Mendoza still leads the kitchen. Rich, creamy potato chowder swims with chunks of potatoes, carrots and broccoli, while a side of puff pastry breadsticks adds an elegant reinterpretation of the traditional oyster cracker. The half smoked chicken could pass for a pork chop with its robust smokiness, but the garlic pudding served on the side is more akin to Stove Top stuffing. Tucked away on the always-quaint Belden Lane, most folks choose the outdoor patio, though on chilly nights, when even heat lamps won’t do, the cozy, bistro-style interior is just as welcoming. Small custom-made booths lend intimacy, and the overall décor of rich mahoganies, creams and a pressed-tin ceiling are reminiscent of the earliest bistros of the twentieth century. The wine list is 90 percent Californian. Desserts hark to the days of the soda fountain and include a banana split.
