Ritzy San Marino has long been mysteriously devoid of good high-end dining rooms, despite a receptive local clientele. The principals of Trio are veterans of Drago, Valentino and other highly respected eateries, and the menu here is far from ordinary trattoria fare. Consider, for instance, a fritto misto that includes deep fried mozzarella-stuffed olives in a garbanzo bean batter, ultra-tender grilled cuttlefish with arugula in blood orange vinaigrette, a masterful Gorgonzola risotto drizzled with a red wine reduction, salt-crusted branzino, a solid veal chop, or pancetta-stuffed rabbit. Desserts include a terrific panna cotta, distinctive tiramisu and a lovely plate of Italian cheeses. The dining rooms are not elegant but eminently inviting, with generously-spaced linen-clad tables, impressive floral arrangements, smoky mirrors and still life oils. The wine list is a work in progress, but already offers some compelling Italian labels.
