Txoko might take its name from a Basque-type fraternity that is historically only open to men, but the restaurant is anything but “bro.” Instead, restaurateurs Ian Begg (the executive chef) and Ryan Maxey, both formerly of the Café Majestic, bring high-concept dishes to this eclectic North Beach haunt. While the overall atmosphere is moody and low-lit, quirky touches keep things lively, such as the wrought iron wagon wheel chandelier and mural of dining farm animals in formal dress. Among Txoko’s small plates, standouts include the coyly named “liver and onions,” a taste of foie gras with grilled cippolini onions, drizzled with a reduction of aged sherry on buttery brioche toast. Seasonal, rustic dishes hark to the days when dinner was cooked via bubbling kettles from ingredients caught or picked that morning. Examples include the ultra-earthy wild mushroom arroz, or the fish and beans, a surprisingly elegant dish of moist butter-basted halibut, sweet corn, chickpeas and wax beans, pulled together with a sweet-onion sauce. Desserts are innovative, as with the date bread pudding with salty black olive caramel and chorizo-candied Marcona almonds. The Spanish inflected wine list is short but grand, and the cocktails are not to be missed.
