Uncle Pete's brought slow-cooked barbecue to a neighborhood where barbecue began and ended with grilled steak tips. Peter Cucchiara uses large chunks of hickory in the enclosed smoker, so his St. Louis ribs absorb its sweet flavors over the course of a few days. We also give a nod to his pulled pork. Among the side dishes, Thai salad may seem an odd choice, but Aunt Pete, as we secretly call her, hails from Thailand. So order it and see how its piquant flavors and crisp bite make a fine accompaniment to Southern-style barbecue. Equally freaky but endearing are the sweet potato biscuits.
