: Union Restaurant & Lounge, the creation of executive chef Brian Massie, offers the convenience of being just steps away from Aria's guest elevators, shops and casino. The restaurant features an avant-garde design with a serene color palette and arching wood columns that afford a view of the casino action from your seat. A good beginning is the king crab and jalapeño taco---won ton wrappers filled with avocado purée, taro chip, Fresno chili and citrus horseradish. We also recommend the beef carpaccio “flatbread”---a light and thin tortilla with micro basil, red onions and Boursin cheese. Prime cuts of New York, filet mignon, porterhouse, rib-eye and American Kobe flat-iron steaks are aged 21 to 28 days and are offered in bone-out or bone-in versions. Signature steak sauces include béarnaise, red wine tamarind, green peppercorn, truffle hollandaise, creamy horseradish and bordelaise. Non-carnivores will like the Chilean sea bass with creamy risotto, rock shrimp and lobster broth; or the two-pound “Ritz”-stuffed Maine lobster. A unique and fun finish are the pudding pops---frozen creations served on a stick in varieties like milk chocolate, butterscotch, vanilla, peanut butter and banana. A hundred globally sourced wines are available.
