Like the original location Uptown, this outpost for Tex-Mex and imaginative Southwestern creations tends to buzz with families and twenty-somethings that stop in for a fajita platter or a shot or two from the lengthy list of tequilas. Historically, Vaqueros' most durable dishes have included moist chicken fajitas, shrimp in a crisp quesadilla wrap, surprisingly tasty lamb chops, and a steak churrasco that could hold its own in much fancier surroundings. The chef, who hails from Santa Fe, has introduced his own dishes, however, like the red chile-rubbed tuna and the pork chop stuffed with asadero cheese, spinach and roasted red peppers.
