Along Old Town’s main drag, Vermilion is a must-visit for the young and trendy set for casual drinks and an upscale meal. Separated into two distinct dining areas, the restaurant showcases contemporary American cooking. The menu changes to reflect seasonal bests, but you can’t go wrong with the unique roasted olives appetizer, a plateful of salty goodness sparked with herbs and garlic. Main dishes might range from all-natural beef to brioche crusted fluke to a tasting of rabbit from Maryland’s Grassential Farm. Who knows what you’ll find, but you won’t be disappointed. As for desserts, there may be crème fraîche panna cotta with lemon poppy seed shortbread and blood orange sorbet or strawberry crumb cake with lemon cream, micro basil and buttermilk sorbet. Guests can also compose a plate of artisanal American cheeses accompanied by house-made fig bread. A four-course tasting menu with optional wine pairings is available, as is a vegetarian version upon request.
