Build your very own pizza by selecting among more than forty toppings that are right in front of you behind a long display. Proteins include clams, Sicilian anchovies, prosciutto di Parma sliced to order, and uncured Fra’Mani rosemary ham. Among vegetarian options are roasted garlic, caramelized onions, peppadews and organic heirloom cherry tomatoes. Add smoked provolone or truffle cheese from Italy. If you are too lazy to decide what to put on the pizza, choose one of “The Classics” or “Specialty Pies.” It’s whisked into the (yes, 800-degree) oven and cooked in about 60 seconds; you then grab it and choose your table or take it home. All of the pies are topped with fresh mozzarella and a drizzle of extra-virgin olive oil and come with a thin crust, as is the case with the original pizza that was created in Naples in 1889.
