![]() : The name of Dylan Amsterdam's luxurious restaurant honors Reinier Vinkeles, a famous Dutch engraver whose copperplate adorns the gate at the hotel's entrance. Only 40 seats at 10 tables are available at this dining room on the Keizersgracht canal. Chef Dennis Kuipers presents contemporary French cuisine, featuring signature dishes such as roasted langoustines with knuckle of veal, marinated small tomatoes, apple jelly and a Vadouvan mayonnaise; roasted Anjou pigeon with five spices and preserved young carrots; and glazed John Dory with pointed cabbage, black pudding and jus of smoked eel. Guests can order à la carte or select from two prix-fixe menus (Menu Alliance, € 70; Chef’s Signature, € 105) with optional wine pairings. |
