Take two cuisines from opposite sides of the globe, mash them together and the result is one strange concept --- but oddly enough, it’s a concept that works. Those seeking the flavors of traditional Japanese cuisine without the confines of a rolled-up, bite-size portion will find the selection of burritos and rice boxes --- even fries and nachos --- a welcome twist that meets modern palates. Volcano nachos are decadent in every way imaginable, the light crispiness of the won-ton chips holding up well against buttery chunks of tuna, rich guacamole and fiery Sriracha aïoli. The sashimi burrito, loaded with salmon, tuna and fried tempura, is also a hit, its pickled cucumbers a cool contrast to the spice of jalapeños and wasabi mayo. Other popular items include a soft shell crab burrito, ahi poke salad and barbecue tuna rice box.
