When it took over from the Regent, InterContinental Hong Kong put itself on the map with its first-rate selection of restaurants, including Yan Toh Heen. Inside the Victoria Harbour-facing dining room with views of Hong Kong Island contrasting with traditional Chinese scroll paintings, the authentic Cantonese cuisine is overseen by chef Lau Yiu Fai. We like the freshness and consistent quality of the food, which includes signatures like golden stuffed crab shell with fresh crab meat; wok-fried Wagyu beef with green peppers, mushroom and garlic; braised whole abalone and seafood on a crispy taro net; golden scallops with minced shrimp and fresh pear; and Peking duck. The elegant honey and gold hued dining room is also a good choice for a dim sum lunch with stand-out classics like steamed prawn and bamboo shoot dumplings and innovative bites such as baked precious seafood with satay sauce in puff pastry, and wok-seared beef with kimchi dumplings.
