Frédéric Vardon presides over this offshoot of 39V, a commendable restaurant just off the Champs-Elysées. In this modern brasserie near the Palais Garnier, patrons indulge in a quick bite at the bar or a roguish meal in an uncluttered dining room. Patronized by Vardon, the young Franck Bérubé prepares seasonal dishes, both simple and appetizing. Expect a farm egg in spinach cream, a hearty Black Angus flank steak drenched in pepper sauce with french fries, and a creamy rice pudding.
