Beyond Cajun, beyond Tex-Mex lies Z'Tejas, a national chain that bills itself as offering dining South by Southwest. Its unique theme derives from a fusion of American regional cooking that embraces the flavors of Louisiana and Texas, bringing catfish and beignets together with enchiladas and chicken-fried rib-eye steak. The kitchen also visits the Caribbean for its jerk chicken and even to Asia for its cast-iron skillet dumplings and seared ahi tuna with black sesame seeds.
