Zuma Restaurant Review

About the restaurant and décor: Created and co-founded by chef Rainer Becker, this contemporary Japanese restaurant on the 3rd floor of The Cosmopolitan presents an izakaya dining style with dishes designed for sharing. Focal points incorporate organic materials, such as a wall composed of natural stone, monkey pod tree trunks throughout and a patchwork wall in the lounge crafted from boldly colored Japanese paper. Visible in the dining room are a robata grill and sushi bar, where you can watch the chefs in action, and the two glass-enclosed private dining rooms offer views of the Vegas Strip.

Likes: In addition to the extensive list of wine and saké, more than 70 Japanese, Irish and American whiskies are available, including the Japanese Suntory Hibiki Harmony, a blend of Japanese malt and grain whiskies from Yamazaki, Hakushu and Chita.
Dislikes: During peak times the restaurant will be filled to capacity and is rather boisterous, so if that is not your preference, consider dining early.

Food & Drinks: From the sushi bar good sashimi choices are the sea bass dressed with yuzu, truffle oil and salmon roe, or the yellowtail with ponzu sauce and pickled garlic. The robata grill expertly turns out dishes like salmon fillet with teriyaki sauce and sliced pickled cucumber; jumbo tiger prawn with yuzu pepper served in its shell; and asparagus skewers with wafu sauce and sesame. From the main kitchen, the miso-marinated black cod wrapped in hoba leaf with citrus wasabi dressing is a melt-in-your-mouth delight, and another fine choice is the spicy beef tenderloin with sesame, red chili and sweet soy. More than 300 bottles of wine are offered, along with about 100 sakés, including the Zuma Ginjo made exclusively for the restaurant. Finish with flourless chocolate cake with a melted caramel center or yuzu Key lime pie with strawberries and meringue.
