Profile: The Trefethen family got involved with the Napa Valley wine industry in the late 1960s by acquiring a nineteenth-century wine estate designed with a gravity flow system. At the time, no one had founded a successful winery in Napa since before Prohibition. But the Trefethens prospered and are now known for the quality of their Chardonnays and Cabernets.

Notes: A big wine for serious Cab lovers, the 2008 Reserve Cabernet is a rich, inky- colored wine. On the nose it offers black currant, black cherry and spice. Full bodied, its fruit flavors of black cherry and blackberry intermingle with toasted oak, exotic spices and just a hint of coffee. Well-structured with a backbone of fine-grained tannins, the wine lingers impressively long with a dark fruit finish. The kind of wine that drinks like a meal, it would be best suited for pairing with simple but hearty foods. Serve with simply seasoned filet mignon, roasted leg of lamb or perhaps a duck cassoulet.
