Champagne Cocktails for the Winter Holidays

– 1 sugar cane
– 0.5 oz. of Cognac
– 3 dashes of angostura bitters
– A dash of simple syrup
• 2.5 oz. brut champagne
Winter Thyme
– 1 oz. of gin
– 1 oz. thyme syrup
