Last October, SAAM restaurant, the chef’s tasting room at The Bazaar at SLS Hotel at Beverly Hills, started the second annual Truffle Season Dinner Series with a meal featuring white truffles. But since black is beautiful, last week the restaurant started offering the black truffle experience. Throughout the 18-course prix-fixe menu, priced at $250 with wine pairings available, diners can discover the culinary creativity and talents of José Andrés, R & D chef Aitor Zabala, chef de cuisine Holly Jivin, and pastry chef Kriss Harvey. I am happy to report that the cuisine has improved since I went last in October. The dinner I experienced last week earned a rating of 18 out of 20, a full point higher than the white truffle meal. The change is evident: an emphasis has been given to the food itself, rather than to the innovative techniques of José Andrés. Don’t worry, they are still here, as this is what we like about Andrés, but they are being incorporated into more “regular” dishes. If you are in Los Angeles before March 15th, and you like, adore, crave or love truffles, then this is a must-go.
