A few weeks ago, I headed to Nic’s Restaurant & Martini Lounge (aka Nic’s Beverly Hills) for a special dinner in which each course was paired with cocktails made exclusively with Grey Goose vodka, which graces our Top 10 vodka list. That was the perfect place to host the event, as Nic’s Beverly Hills is the only restaurant west of Las Vegas that has what chef/owner Larry Nicola and his son Luke, creative director, like to call the “VodBox,” a walk-in freezer filled with some of the best boutique vodkas in the world.
I was surprised to discover that the cocktails were prepared by Guillaume Jubien, master mixologist & ambassador of Grey Goose Vodka Brand. Lucky me; this was the second time in a few months that I was attending a vodka pairing dinner with Jubien in charge of the drinking portion. For out of all of the mixologists whose concoctions I’ve tried, he is the best one. He is so good, that I don’t think he learned his skills; he just has a special gift for making elegant drinks. They are always perfectly balanced, not too strong and extremely creative. Too bad he doesn’t have his own lounge!
I can’t forget to mention the dishes prepared by chef Nicola. As I also like his cuisine, let me tell you that I had a great evening.

- Tangerine Sour: Grey Goose Le Citron with pink peppercorns and roses
- Poached lobster with mango, persimmon trifle and tangelo foam
- Road to Tunisia: Grey Goose Le Poire with pistachio foam
- Dandelion greens with pears, Humboldt Fog goat cheese and pistachios and apricot vinaigrette
- Pear Ginger Sour: Grey Goose Le Poire with black pepper, maple and roasted sesame
- Peppered pork belly with buckwheat soba, pickled Savoy cabbage and cracklings
- Un, Deux, Trois: Grey Goose Original, lemon verbena granita and savory mule
- Three Wise Ravioli: wild goose, Porcini mushrooms, pumpkin and maple sage
- Le Noir: black sesame pudding with Grey Goose Le Orange and passion fruit-coconut foam
- Mousse à la Orange with orange flower meringue
