Irish eyes are smiling on this seventeenth-century castle and cookery school on the Duke of Abercorn's Belle Isle estate in Northern Ireland. Purpose-built kitchens — with modern appliances and a classic oil-fired Aga oven — feature views of the Florence Court Mountains and are designed to take advantage of natural daylight. It is here that chefs Liz Moore and Naseem Booth teach classes such as Modern Dinner Party, Art of Curry and the not-for-vegetarians Shoot, Cook and Eat (including pigeon shooting on the 470-acre estate). Along with an intensive four-week essentials course, Belle Isle offers a series of casual evening, daylong and weekend classes, all of which incorporate herbs and produce grown in the kitchen gardens.
