Salt Spring, the largest of Canada's Gulf Islands with a population of 12,000, is home to Hastings House, an exclusive waterfront country estate designed to resemble an 11th-century Sussex-style manor house. Drinks and meals are served in the main house, which overlooks Ganges Harbour, but the eighteen unique guest rooms and suites, each with its own décor and history, are situated in seven buildings scattered around the estate. Guests spend their time taking strolls through rambling meadows or the Saturday morning markets and quaint retail shops, relaxing on the flower draped patio, dining on roasted leg of Salt Spring lamb with Gruyère potatoes and Savoy cabbage and hot orchard quince soufflé for dessert, or exploring the community which is home to a diverse population including many artists that were lured here by the scenery.
