The long, tall, Provençal dining room is a comfortable place in which to sample Alain Assaud's sunny, market-fresh cooking. Once the pastry chef at L'Oustau de Baumanière, Assaud is an ace when it comes to desserts. For twenty years now, he's been strengthening his Provençal repertoire. Try the broad bean and vegetable ragoût, fresh cod garlic mayonnaise of lamb with anchovy juice. Decent regional cellar; slow-coach service.
