Chef Gator Thompson hits the nail on the head with Creole and Cajun favorites tweaked to grab the attention of a California-cuisine crowd. The jovial crowd seems to be enjoying it all---thick crawfish bisque, robust gumbo, nutty étouffée, to name a few.
