Apollinare is definitely not a typical Philly red gravy emporium. Spoleto native Fabio Auguadro is behind the restaurant, a “real deal” Northern Italian eatery in the Northern Liberties' Piazza at Schmidts. Auguadro re-created a restaurant he and his partner opened in their hometown of Umbria. It’s a modern spot with professional service---much of it tableside. Auguadro’s authentic cuisine ranges from homemade spelt pasta ribbons and cauliflower tortelli to wild boar braised Umbrian style and salt-crusted branzino. The signature “la caramella soffiata al tartufo nero Norcia” is a very long name for puff pastry filled with Fontina cheese and served with Parmigiano-Reggiano cheese and black truffle fondue. We suggest ice cream for dessert.
