A team, an aircraft carrier that powerfully cleaves the ocean with determination, voilà le Foch of Corinne and Jacky Louazé, masters of the sea waters in the capital of Champagne. Despite certain echoes of momentary pitching, we can confirm these two as seafood experts. The elegant environment mirrors the refinement of every dish worthy of the interest of the taster: shrimp ravioli and mussel curry, braised scallops with anchovy paste, pike perch roasted with wild rice and acidic beet. The desserts are modern, including one pretty adaptation of the Reims biscuit.
