About the restaurant: Louisiana chef John Folse and Chicago-born chef Rick Tramonto team up to craft a distinctive take on traditional Louisiana fare. If there is a drawback it’s the high price point, far exceeding established fine dining houses such as Arnaud's and Antoine's. But if you would like the experience of dining in an elegant Southern-style room, complete with beautiful draperies, chandeliers and expert service, this is the place.
Food & Drinks: You might encounter such dishes as beer-battered crab beignets, crispy sweetbreads accented with herbsaint, crawfish-stuffed redfish with artichoke and oyster stew, and tea-smoked duck with foie gras rice. Southern sensibilities are best exemplified by a Cajun-fried oyster salad with bacon and blue cheese. The ultimate R’evolution dining experience could begin with Tramonto's "caviar staircase" of all black caviars. A state-of-the-art, 10,000-bottle wine cellar and an unusually complex wine list offer such hard-to-find selections as Château Margaux (1961). Dinner can be a three-hour affair, ending sweetly with a good Southern Creole cream cheese panna cotta or a chocolate Grand Marnier soufflé. Call well in advance for a reservation, especially for large parties.
